With London's Notting Hill Carnival as the backdrop for his concept, the Trini Luau started with a bang, bringing together a new experience in the Carnival arena, one that would prove to be a winning formula in the years that followed.

Chef Danclair's Nouvelle Caribbean Cuisine has been the mainstay of the Trini Luau, the foundation upon which all other elements are added, blended and served to satisfy the demanding taste buds of Trini Luau's clientele.
